The All Organic, Frugality Challenge: Day 2

First off, why the cookie pictures? Well, I just like to dream that’s what I’ve been eating.

As Tuesday winds down, I’m beginning to question my rations. From the last two days, I’ve found that in order to eat enough (based on a $25 budget plan), you’ve got to be creative. Take anyone up on any free food, go seminar crashing for the food, and make those roommates feel guilty. Although this puts the whole $25 budget for one person experiment in a bit of an odd place, it may be the only way.

Truth is, I haven’t benefited too much from this – so far, a pork loin last night and a crab sandwich today, but that’s still two meals, and who knows how I would feel without them. If this trend continues, I plan to estimate the cost of these “luxuries” and report two funds at the end of the week.

Here’s the info for today!

Day 2 Summary:

  • Transportation – $0
  • Food (aggregate) – $3.50
  • Entertainment – $0
  • Other – $0

Again, no cab or public transit today. I mainly dined off my groceries with the exception of lunch (mentioned above). I’ve found that peanut butter is going to be my staple food – hearty, filling, and high in caloric value.

Breakfast -

  • 2 eggs, over easy
  • Sprinkle cheese
  • 1/2 cup Sqaush, zucchini
  • 1 cup milk
  • 1 slice wheat toast

Lunch:

  • Crabcake Sandwich (not organic, but freshly caught at the Wharf in DC)
  • Coleslaw (side to sandwich)

Dinner:

  • 2 cup pasta
  • olive oil, garlic for seasoning
  • 1/2 cup Sqaush, zucchini
  • 1/4 onion
  • 1 cup milk
  • Peanut butter and Jelly on single slice of bread

As probably evidenced by my seemingly large dinner, I was pretty hungry at the end of the day today. Although it was tough, I made it through and ended the day with a full stomach. Looking forward to tomorrow!
