Makes 12 Muffins
Preheat oven to 400F (200C) and prepare pan.
In A Large Bowl Combine:
2 organic eggs
½ cup coconut oil, gently warmed
¾ cup yogurt, plain
1/3 cup raw honey
½ cup pumpkin puree
In A Smaller Bowl Combine:
1 cup organic whole wheat flour
1 cup almond meal
1 T. baking powder
½ t. salt
1 t. cinnamon
Fold wet ingredients into dry until just mixed, spoon into prepared pan. Bake at 400F for 15-20 min. Remove from pan and cool on rack.
